Stir in the minced garlic and continue cooking for one more minute before adding the deglaze and garlic.
To deglaze the pan and scrape out any browned pieces from the bottom, pour in the white wine (if using). For two or three minutes, let the wine to decrease in volume.
Step 3: Add the beef stock, bay leaves, thyme, salt, and pepper to build the broth.
To give the soup time to simmer and combine flavors, reduce heat and simmer for 20 to 25 minutes. Take the bay leaves out before you serve.
4. Preheat the broiler in your oven while the soup simmers. Then, prepare the baguette topping.
Place the sliced baguette on a baking pan. Broil for a minute or two on each side, or until golden brown.
5. Before broiling, transfer the soup to oven-safe cups and set them on a baking sheet.
Toss a toasted baguette slice and a mountain of shredded Gruyère cheese into each serving dish.
Melt and bubble the cheese by broiling for two or three minutes.
6. Before serving, carefully take the soup from the broiler and allow it to cool a little. If you'd like, you may serve it hot and garnish with more toasted bread.
